Chocolate Chia Seed Pudding

Quinoa is rich in antioxidants which can prevent damage to your heart and other organs. The fiber in quinoa can also help with cholesterol and blood sugar levels, lowering your risk of diabetes and heart disease. Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. Tomatoes are also a great source of vitamin C, potassium, folate, and vitamin K. Red peppers are an excellent source of vitamins A and C. One red pepper provides you with 47 percent of your daily recommended intake of vitamin A and 159 percent of your vitamin C.


Ingredients

1 1/2 cups coconut milk 

4 tablespoons maple syrup or honey (or substitute with a few drops of stevia)

2 tablespoons cocoa powder

1 tablespoon vanilla extract

1/2 teaspoon almond extract (optional)

1/3 cup chia seeds 

1/2 cup your choice - berries, walnuts, coconut, etc.


1.     Whisk coconut milk, maple syrup, cocoa powder and extracts until smooth. Stir in chia seeds. Divide mixture evenly between 4 bowls or containers. Let sit at room temperature for 2 hours. Serve.

2.     If you’d like to make the pudding ahead of time, cover tightly and chill in the refrigerator. 

You can make this pudding with milk, cream or almond milk, or honey instead of maple syrup, stevia, etc.
